PRODUCTION AREA: Alta (Higher) Val Tidone vineyards situated on eastern facing slopes.
CRAPE VARIETIES: Chardonnay of Burgundy cloane and Ortrugo typical of our hills. Cultivation method: simple Guyot and Spurred Cordon.
GRAPE HARVEST: By hand, in small crates with a manual selection of the grapes before pressing. Harvest is usually carried out around the last week of August and the first week of September.
YIELD: 50-60 hectolitres of wine per hectare.
VINIFICATION: the two varieties are separated with a soft pressing of whole grapes and a first fermentation in temperature controlled stainless steel vats at a temperature of 15°C.
SPUME: Martinotti method where the wine is re-fermented for about 9 months in stainless steel tanks.
COLOUR: pale straw yellow.
AROMA: particularly elegant and fine, fragrant and fruity with evident hints of pear and white pulp fruit, equally with floral scents of white petal flowers.
TASTE: Its fine and delicate bouquet is well balanced with a good sapidity and freshness to the palate, where all the initial floral and fruity nuances re-emerge. Creamy and smooth in the mouth bestowing a perfect balance of olfactory and taste together with a persuasive sensation of liveliness.

Versatile wine throughout the entire meal, but ideal in many other occasions of the day where it is well suited as an aperitif or a toast with friends. It is recommended with appetisers, starters or simple main courses of sea or river fish.
